2 acorn squashes
200g sausage
1 apple, diced
1/2 onion, diced
2 cloves garlic, minced
1/2 cup breadcrumbs
2 tablespoons olive oil
Salt and pepper to taste

Preheat the oven to 200°C (400°F).
Halve the acorn squashes, remove seeds, brush with olive oil, and sprinkle with salt and pepper.
Place on a baking sheet and roast for about 30 minutes until tender.
In a pan, heat olive oil and cook sausage, onion, and garlic until done.
Add apple, breadcrumbs, and thyme, mixing well.
Stuff the roasted squash with the mixture and bake for an additional 10 minutes.
